Surrender 69: Frozen Banana Dessert

I’ve seen posts about this one ingredient “ice cream” for several years. During my year of firsts, it was on my list of things to try. However, I never got around to it. Now, two years later, I decided to give this dessert a try! 

 

Making this healthy dessert couldn’t be easier. The only ingredient is a banana. Use ripe bananas that are beginning to get brown spots on the peel.  One banana makes one serving of smooth, creamy ice cream. 
  
Peel banana and slice. I used two bananas. Place in a plastic bag or on a plate and pop into the freezer. Allow the banana pieces to freeze solid, at least two hours. 

 

Using a blender or food processor, process frozen banana pieces, stopping frequently to stir. Here is the secret. The pieces keep breaking down, into smaller chunks and then a gooey mass. Stir. Keep processing. Just as I was saying aloud, “This doesn’t seem to be working”, it transformed into a smooth creamy mix. 

 
The “ice cream” can be eaten immediately. It will have a soft serve consistency. Or it can be placed back in the freezer to firm up. I chose to do the latter. 

An hour later I enjoyed my dessert. I added a dash each of nutmeg and cinnamon. Delicious! The texture was indeed creamy, like frozen custard. And best of all, there wasn’t any added sugar or fat, and no added guilt. There are lots of ideas online, for adding additional fruit, Nutella, chocolate or coconut. 

I may try some of those other suggestions someday. For now, I like the simplicity and the  wholesome goodness of using just a banana!
