To Market, To Market

It was a long and busy Tuesday. In the midst of work and lunch with a cousin and an elementary school open house, I was mindful that the farmer’s market was open this afternoon. I took a few minutes today to scribble out a menu for this week and make a shopping list. And I tell you, my shopping has become extremely basic and simple!

There it is, pictured above, food for this week’s meals. I divided my time shopping this afternoon and late this evening at the Webb City Farmer’s Market and my neighborhood Walmart Market, picking up fresh fruit, fresh veggies, frozen wild blueberries and brown rice.

On the menu for the week is my morning celery juice followed by a cold, fruity smoothie. Lunches will alternate between salads full of greens and vegetables, baked sweet potatoes and fresh fruit, and homemade vegetable soup.

Dinners include a baked potato with black eyed peas and sliced tomato, stir fry veggies with brown rice, and the vegetable soup topped with avocado.

I love the wholesomeness of the colorful ingredients that await transformation into healthy, nutritious meals. I’m ridiculously excited about including cooked veggies and brown rice! I’m even more excited about this ongoing journey into healing.

Over and over today the thought arose, “I feel SO good!” And with that thought, a grin would appear on my face. People would pause and grin back at me, unsure what I was smiling about but willing to join in my apparent happiness.

Kevin Trudeau says “Most people have no idea how good their body is designed to feel.” I am beginning to understand.
