As one who lives a plant based lifestyle, I’m always on the hunt for restaurants and cafés that offer vegan options. I’m fortunate that my hometown of Joplin, Missouri has several such restaurants. I regularly patronize those.

And it’s a delight to discover a new place.

Recently, after walking on the Tanyard Creek Nature Trail in Bella Vista, Arkansas, I checked to see if any cafés nearby offered vegan meals. Happily, one popped up a short distance away. Unfortunately, the café was closed on that day. However Bella Vista isn’t far from Joplin. Greg and I made a deliberate trip back to Bella Vista, just to check out The Veggie Table. I’m so glad that we did!

The Veggie Table

First of all, I love the clever name of this café. Say it out loud a couple of times…veggie table…veggie-table….vegetable. I adore cleverness!

The Veggie Table is a health focused restaurant and bar. The emphasis is on presenting a variety of dishes that are vegan, gluten free, vegetarian, sustainable and organic. Their desire is to change the world and the way people eat, one meal at a time.

Their mission so resonates with me! This is a restaurant with a higher purpose and I am excited to share about my experience there and support their intentions.

The café is attractive and casual, making it the perfect hangout spot to meet friends, enjoy a delicious meal, have a drink….or all three!

Meet the Owner and Chef of The Veggie Table

I enjoyed meeting the owner and chef as we finished our meal.

Abby Milam is an Arkansas girl, born and raised in Fayetteville. She left for a time, to attend culinary school in Switzerland and to travel the world. During her travels she learned about other peoples, places, cultures, and food.

The love of cooking runs in her family. She grew up observing and learning from her grandmother, dad and mom. At some point she realized that the way food is raised, grown and consumed is unhealthy. Those realizations spurred her into action. Abby’s hope and goal is to make healthy food accessible to everyone.

She is doing that, admirably. The Veggie Table planned a spring opening this year. That was postponed slightly until July, due to COVID.

Enjoying an Amazing Vegan and Gluten Free Meal

Greg and I studied the menu. The Veggie Table offers a variety of healthy meals such as salads, with or without protein, bowls such as salmon quinoa or mushroom, and wonderful main dishes.

One can choose from bison burgers or impossible burgers, Waldorf chicken salad on an oat waffle or a mushroom Reuben sandwich with vegan cheese. Try a veggie wrap or a gluten free pizza on a cauliflower crust.

And the sides are just as tantalizing. Add sweet baby carrots with parsley to your meal or enjoy roasted Brussel sprouts or veggie chips. See the full everyday menu HERE.

We started with a bowl of crispy veggie chips to munch on. And we probably should have chosen different meals. However, when we saw the tostados on the menu, we both knew that’s what we wanted. They are the BEST tostados I’ve ever eaten. Greg felt the same way. Baked corn tortillas come topped with lentils, quinoa, shredded cabbage, jalapeno, avocado, cilantro and salsa. Yum!

We did order different desserts. Because yes, The Veggie Table offers vegan and gluten free desserts, served in tea cups! You know I had to have one, just to see it arrive in a tea cup. Greg sampled the banana pudding while I tried the chocolate avocado mousse with berries. Such wonderful desserts in perfectly sized portions. I savored a cup of herbal tea with my treat.

Where to Find The Veggie Table

We so enjoyed our meal. The cozy interior encouraged us to linger and take our time with our food, which is the very best way to eat.

Our attentive waiter, Norm, kept glasses of water filled and offered helpful suggestions. He also answered my questions and directed Abby to our table when she was free.

And I appreciate Abby and the vision she carries. Greg and I plan another visit very soon, to sample more of this café’s tasty meals.

The Veggie Table is located at 1733 Forest Hills Blvd in Bella Vista, Arkansas, just south of the Missouri border. The café is open Wednesday through Saturday, 11:00 am to 9:00 pm. And Sunday they offer brunch from 10:00 am to 2:00 pm. I understand that the brunch is incredibly good. I can’t wait to try it.

Currently, masks are required when entering the restaurant and if you leave the table to go to the restroom, in accordance with their state’s regulations. Tables are spaced to maintain social distancing and the whole restaurant is meticulously clean.

If you live in the four state area, or happen to be passing through, treat yourself to the hearty and nourishing meals at The Veggie Table. You won’t regret it. And tell Abby I sent you!

Tanyard Creek

My adventures led me south today, just across the state line into Bella Vista, Arkansas. I have driven through this community many, many times unaware of a nearby nature walking trail, located just a mile from the center of town.

I explored the beautiful Tanyard Creek area, walking the 2.2 mile trail through woods, up and down hills, and along the meandering streams.

The day started off cool and overcast, and I dressed appropriately. By the end of the hike, which took approximately two hours, the sun had broken through the clouds and temps had climbed into the 50s. I was happy to shed my Mizzou hoodie and head band when we arrived back at the car.

Arkansas is known as the Natural State. With an abundance of conservation areas, rivers and lakes, the state is well deserving of the nickname.

This is Tanyard Creek.

The wide asphalt trail quickly turned into dirt, which I loved. At times the path narrowed so that we had to walk single file. And, I have to confess, more than once we lost the trail, with the heavy coverage of fallen leaves, and had to backtrack. And a couple of times, the trail became well placed rocks across a stream.

There were multiple bridges due to the many streams and creeks that crisscrossed the area. Near the end of the trail was a suspension bridge across the water. That one was fun to cross!

Tanyard Creek Trail has dozens of small signs, placed near the paths, identifying trees and plants and flowers. I really appreciated the info. Often, on a walk, I pause to wonder what kind of tree this is or what shrub that is. Today, I was informed. Some of the signs told bits of the area’s history, or identified ruins as an old farmhouse foundation or an ancient country road.

I love walking through the woods. Add water, in the form of lakes, ponds or rivers, and I experience deep bliss. The gurgling sound of brooks and streams or the splash of water pouring over ledges of rock are music to my ears and my soul.

Most of my photos from today’s walk have water in them.

I am grateful that my daughter Adriel and son-in-law Nate told me about these trails. The walking difficulty is moderate, and I did great, which is such an encouragement to me. This is the longest hike I’ve done during my challenge, and I marvel at what I can do now, that I could not accomplish in 2016. This daily walking is good for me, on so many levels.

Less than an hour from Joplin, Tanyard Creek is close enough to visit frequently and explore at different times of the year. I’ll be back!

Day 132: Arkansas Firsts

Image

I had a change in plans today and headed to the Natural State, Arkansas. Greg’s dad lives in Decatur and Greg had not been able to reach him by phone. Being that his dad is 93 years old and only has a land line,  that was cause for concern. Thankfully, the phone line was malfunctioning and a call to the phone company resulted in the eventual correction of that problem. Greg and I were able to spend time with his dad, who wasn’t feeling well. Or as he put it, “Sometimes I think I’m getting old, and sometimes I know I am. Today, I feel old!” After a long and full life, he is feeling weary, at a very deep level. I’m surrounding him with love and light and gentle energy.

After leaving Decatur, I went in search of a first for the day! Greg’s cousin, Pam, and her husband, Jay, now live in Bella Vista, AR. I had not seen Pam for at least 13 years! And I had not met her husband. So while cruising toward Bella Vista, waiting for Pam to become available to meet, I spied with my little eyes….a garden center in Bentonville!

Some people can’t pass up a shoe store or drive past a Starbucks without stopping. For me, especially this time of year, this is true for garden centers. Bogle’s Garden City, located at 2105 S Walton Blvd in Bentonville, AR, was so fun to explore! With its attached greenhouses, it is much larger than it looks from the outside. I was searching for ornamental grasses, but I enjoyed wandering up and down the aisles and strolling down the pathways, looking at everything. I was impressed with the selection of plants, trees, shrubs and flowers, and I found the varieties of grasses that I was looking for! I want to spend time in Joplin this week, checking out our local garden centers, however, it was great to discover Bogle’s Garden City and know it is only a short distance away.

Pam and Jay live in a lovely town right on the Arkansas/Missouri state line. It was great to see Pam again and meet Jay! We toured their beautiful home and stood on the back deck, as thunder rumbled overhead and the first fat raindrops began to fall, and discussed gardening and transforming backyards into sanctuaries. We left the house to visit the Mildred Cooper Memorial Chapel, but en route, the gentle rain became a torrential downpour, accompanied by lightning, thunder and briefly, small diameter hail. We scratched that first for today, and regrouped at Las Fajitas, a Mexican Grill, located at 42 Sugar Creek Center in Bella Vista. Another first, as this was a new restaurant for me.

We shared a great dinner and lively conversation as we caught up on each other’s lives and families and as I got to know Jay. I first met Pam and her sister and brothers years and years ago, when Greg and I were dating. Greg’s dad and Pam’s dad are brothers and the whole extended family used to gather for Christmas or a summer meal at Grandpa and Grandma Moore’s house on the creek in Noel, MO. We laughed over old stories and shared new ones. I always enjoyed being around Pam and her siblings and parents and I admired their obvious closeness as a family. It is amazing that we all have grown or nearly grown children and precious grandchildren now! Sitting there chatting over a cozy meal, it didn’t seem possible that so many years had passed. I don’t intend to let much time pass before getting together again. There are flea markets to explore in Bella Vista and the beautiful chapel to see.

I’m learning not to be concerned about finding firsts, but to relax into the experience, trusting that as my daily journey is unfolding, the first will be there, or as today proved, the firsts! Let the adventure continue….
