This post falls under the category of Health Story, and it will serve double duty, as I will share this post on the Journey With Healthy Me blog as well. Two years ago this month, I embarked on a healing journey that has completely transformed my life. Here is a recap on the healing that occurred during year one, and an update with the continued healing that has taken place in the last 12 months.

My healing journey began with a desperate prayer for help. After suffering with chronic sciatica and pain in my legs for 20 years, after a car accident, my left leg deteriorated, requiring me to walk with a cane. The pain and the tightness in leg joints and muscles continued to worsen. I struggled to walk at all, or sleep, or even straighten out my legs. A wheelchair seemed inevitable.

I asked the Divine for help and help arrived the next day, via an article by Anthony William, the Medical Medium. He wrote that a traumatic incident, such as a car accident, could create injuries that do not heal and chronic pain. His words described me and my condition. Thankfully, he offered hope. I ordered Anthony’s books, and immediately began a 28 day healing cleanse, eating raw fruits and vegetables. I saw such remarkable improvements after 28 days that I adopted a plant based lifestyle and never looked back.

I avoided meat, eggs, dairy, sugar, gluten, soy, corn (unless non GMO) and canola oil. And I ate fruits, vegetables, brown rice, legumes, nuts and seeds. The problem, I discovered from Anthony, was that the viruses I had in my body…some since childhood…were wreaking havoc. The shingles virus was the culprit that attacked my sciatic nerves. Epstein Barr and strep had infected my liver and thyroid, and other organs and body systems. My action plan was two fold: eliminate the viruses by avoiding the foods that feed them and support my immune system with healthy, wholesome food.

It worked. In the first year I experienced healing of these symptoms/disorders:

sciatica • inflammation in legs & body • pain in legs • high blood pressure • irritable bowel syndrome • sensitive gut • severe acid reflux • indigestion • rashes & hives • tinnitus • gall bladder inflammation • headaches • sinus problems • seasonal allergies • joint pain • nerve pain • insomnia • heart palpitations

I also dropped excess weight.

With such amazing changes in my health, I chose to remain plant based. Returning to my old way of eating would mean a return to my old way of feeling unwell. I’m not willing to sacrifice my health, ever again.

My mainstays this past year, as my healing journey continues, are celery juice first thing in the morning, followed by a fruit smoothie. At least 3-5 times a week, that breakfast smoothie is a heavy metals detox blend of wild blueberries, bananas, Hawaiian spirulina, cilantro, Atlantic dulse, chaga mushroom powder, barley grass juice powder, aloe vera gel and hemp seeds. I eat fruits and veggies, and add brown rice, legumes, nuts and seeds to round out my diet. I sip on lemon or lime water, ginger water, juices and herbal teas throughout each day.

My meals are simple, beautiful, and full of health boosting nutrients. I rarely eat out, preferring to prepare meals at home. A desire that I expressed, to cook more, is being fulfilled with this lifestyle.

In the past 12 months, my health has continued to improve. I’ve experienced healing of these symptoms/disorders:

frozen sacroiliac joint • floaters in both eyes • discoloration on fingernails and toenails • ocular migraines • chronic dehydration • menopause symptoms such as flushing, night sweats, hot flashes • fluid on left knee • mouth sores • tingling and numbness in feet and hands • restless legs syndrome • overactive thyroid • toxic liver • neck pain and stiffness greatly reduced (my neck vertebrae are so messed up from the car accident that X-rays freak out doctors…but my neck doesn’t hurt like it once did)

My skin is clear and healthy. My hair texture has improved, and although it’s hard to tell in photos, as my silver hair reflects more light, I swear my hair is darkening up. I have more dark strands of hairs growing in, than I did a year ago. My legs feel so incredibly good that they amaze me every day. I continue to see improvements in flexibility and strength in both legs. I am energetic, have mental clarity and operate at a high vibrational frequency.

I’ve come to understand how marvelously and wonderfully made my body truly is. It is a finely tuned sensor, that lets me know if I need the nutrients in a certain food, or if I accidentally ingest something I shouldn’t. I trust my body. I listen to it. I respect it. I nourish it and care for it like I never have before. And I’m mindful of what I put on my skin and in my home. I’ve been eliminating chemicals and toxins by switching to natural cleaning, laundry and bath products.

To celebrate my two year anniversary, I climbed into my favorite tree…the redbud in my front yard, something I couldn’t do two years ago. This tree survived the Joplin tornado in 2011, when thousands of trees perished. My redbud twisted and lost branches and now bears scars…but its deep roots held. The redbud tree is symbolic of my own experience. I’ve survived my own storm, one that lasted many years. I twisted, parts of me broke, and I bear scars as well, however, I am strong and determined, and healing continues.

This exciting journey is ongoing with health and wellbeing my priorities. It’s onward and upward from here.

Documentary Review: Eating You Alive

This is a late night post. I just returned from the movie theater, where instead of watching a film, I had the opportunity to watch a documentary that is very relevant to my life. And not only that, I met up with a group of people who are making changes in their diets and reaping the benefits. It was wonderful to watch Eating You Alive with like hearted, like minded, free spirited souls who are making differences in their lives and the lives of others.

Eating You Alive features a host of plant based physicians, vegan chefs, celebrities who have embraced this lifestyle and people who have healed from a variety of diseases and disorders, after changing their eating habits. Directed by Paul David Kennamer Jr, Eating You Alive has a run time of 2 hours and 2 minutes.

This documentary explores how the standard American diet is creating and contributing to the diseases and disorders that we are suffering from, including cardiovascular disease, diabetes, autoimmune disorders and cancers. Medical professionals across the US chime in to share their own personal experiences with a plant based diet and offer solid reasons for making changes in eating habits.

Interspersed among the doctor interviews were celebrities such as Penn Jillette, Samuel L. Jackson and James Cameron who shared about healing from disorders, losing weight and experiencing overall improvement of their health and well-being after going plant based. Also included were people who told their healing stories, often with great emotion. Many had been told they had months to live. They were sent home to die.

And yet, not finding help from traditional medical care, they instead took charge of their health and changed what they ate. They did not die. They reversed their diseases. Because, if the food we eat is contributing to our poor health, then changing what we eat can improve it.

I appreciated this honest look at the health industry and the benefits of a plant based lifestyle. I already embrace it, however it was very good to hear so many doctors speak about how eating fruits, vegetables, legumes, healthy grains, nuts and seeds can bring such life changing goodness to the body. I know what a plant based lifestyle has done for my health. To see doctors promoting it and so many people experience healing was exciting.

There was sobering information as well. Diseases are on the increase. People are getting sicker and more obese with the current American diet. Animal cruelty is often practiced in raising livestock for food consumption. I firmly believe the stress that those animals live and die under is passed on energetically to those who eat their meat and eggs and dairy products, and drink their milk.

And perhaps most alarming of all was hearing the physicians say that in medical school they were taught very little about nutrition and the healing power of foods. Rather, they learned to treat symptoms, not the underlying causes of the diseases. Similarly, big pharmaceutical companies provide medications that ease symptoms while causing a host of equally debilitating side effects.

On the surface, it seems so simple. As Hippocrates said, “Let food be thy medicine and medicine be thy food.” There are many reasons why it is not simple…food addictions, lack of support, lack of knowledge, and fear of change, to name a few. The choice is our. We decide whether we want greater health and well being, or if we want to continue on with a poor diet and poor health.

I left the theater with a renewed determination to live my life as an example of one who has healed, and continues to experience deeper healing. And with the desire to help as many others as possible so that they too can enjoy long and healthy lives.

An Abundance of Goodness

Day 4 of Gratitude Week falls on Thanksgiving Eve. I am doing what I usually do on this night before Thanksgiving…I am preparing food for tomorrow’s meal. We had our big family Thanksgiving Sunday, while my son was off work. Tomorrow is a more casual meal with my two daughters and their husbands, Greg, and grandson Dayan.

We are all contributing to the meal, which will include smoked turkey and brisket, for the carnivores in the family, and an abundance of veggie side dishes, for the plant based eaters.

My gratitude today is for the delightful fact that holiday meals and a plant based lifestyle are not exclusive of each other. I will dine well tomorrow and enjoy spending an afternoon with family. We will share food, talk, laugh, play games and celebrate a birthday.

I am grateful for a wealth of healthy recipes to try out. Tonight I made three dishes for tomorrow, trying out two new recipes and recreating a favorite from last year.

The foundation of the recipes was plenty of fresh fruits and vegetables. Here is a peek at what I am contributing tomorrow:

I made Raw Cranberry Relish, from Life Changing Foods, last year for the first time. I like cranberry sauce, even the blob of stuff from the can. This relish, made from fresh cranberries, apples and oranges is amazing. And it is so easy to make, using a food processor. The recipe calls for coconut sugar, which is a natural, unrefined sugar. Last year I substituted raw honey. Tonight I had coconut sugar on hand. This is seriously so delicious, that even people who think they don’t like cranberries might be surprised.

Cranberries are full of antioxidants. They not only aid in healing urinary tract infections, they reverse gallbladder disease, cleanse the liver and help with kidney stones. They also help heal cardiovascular disease and draw radiation out of the body.

I wonder why I only make this around Thanksgiving? While cranberries are plentiful, I should be making this relish once a week!

I am super excited about this Sweet Potato Casserole. I found the recipe on Pinterest, posted by Nutritional Foodie. I made a sweet potato casserole for years. That one was full of butter and brown sugar and used canned yams. This one started with fresh sweet potatoes that I cooked myself and then mashed with coconut oil, spices, coconut sugar and unsweetened almond coconut milk. The topping, which I’ll add in the morning before baking, has pecans, coconut sugar, coconut oil and garbanzo bean flour.

After I poured the sweet potato mixture into the casserole dish, I tried a bite, from the bit left in the pan. It is so wonderful! And this version is good for me. Sweet potatoes are full of vitamins, minerals and other nutrients and promote productive bacteria in the stomach while starving out unproductive bacteria and fungi. They help regulate hormones and promote sleep.

Look at this colorful dish! The Mixed Veggies with Brown Rice features fresh carrots, broccoli, cauliflower and zucchini, along with organic peas and red kidney beans. Combined with the brown rice, this will be a wholesome, protein rich dish that will be the main part of my meal tomorrow. This recipe comes from a little cookbook called Slow Cooker 100% Vegan.

I have the raw brown rice in the slow cooker and the veggies prepped and seasoned with mixed Italian herbs, sea salt, coarsely ground black pepper and fresh garlic. I’ll stumble into the kitchen at 3:00 am to add the veggies to the slow cooker, along with two cups of water, and turn it on low. It will finish cooking just in time to cart it to Adriel’s house. I’ll bet it will smell wonderful as it simmers.

I am so full of gratitude as I sip on my turmeric milk, all my food preparations completed. During my healing journey I have realized this truth, and accept it wholeheartedly…

What I eat becomes the fuel that my body uses to live and thrive…or exist and struggle.

EVERYTHING I eat and drink matters. Poor nutrition results in poor health, illness and pain. Good nutrition results in good health and an immune system that can fight off invaders and heal itself, maintaining well being.

I choose carefully what I nourish myself with. During celebrations or the holidays, I am not missing a thing by holding to my plant based lifestyle. What I gain is continued health, not extra pounds or an upset digestive system.

Chaga Mushroom Tea

I had never heard of chaga mushrooms, before reading Life Changing Foods by Anthony William. In the book there is a chapter on the benefits of this immunity building wild food, which is technically a pre-mushroom fungus growth.

As I have been nurturing myself and allowing my left knee to heal, I used the Life Changing Foods book to look up all the foods that fight inflammation in the body, and especially in joints, as it feels like I have inflamed tendons and/or muscles around my left knee . Included on my list of beneficial foods was the chaga mushroom.

It was time to try this food, sold in the form of a very fine powder that can be added to smoothies or made into a tea. My order from Amazon arrived today, in time to prepare my first chaga mushroom tea.

According to Anthony, the chaga mushroom is all about building immunity in the body. The phytochemicals in chaga fight cancer, regulate blood sugar, boost the adrenals while regulating the rest of the endocrine system, break down and dissolve biofilm (a jelly like substance that’s a by product of certain viruses and fungi) and destroys unproductive fungus in the digestive tract.

Chaga is beneficial to those with cancer, autoimmune diseases, and a host of major disorders such as MS, ALS, tendonitis, sciatica, HIV, and chronic fatigue syndrome. It fights inflammation causing viruses such as Epstein Barr and shingles.

These symptoms warrant bringing chaga into your life: inflammation, shoulder, neck, head or back pain, headaches, pre fatty liver, joint pain, rashes, hives, body fungus, neurological symptoms, joint inflammation and poor circulation.

With so many health benefits, I was very willing to add chaga to my diet! Tonight I tried this easy to make tea. The recipe is included in Life Changing Foods.

Chaga Tea Latte Makes 1 cup

• 1 teaspoon chaga powder (fine powder)

• 1/4 teaspoon cinnamon

• 1/2 – 1 teaspoon raw honey

• 1/8 cup coconut milk

Boil one cup of water. Place chaga powder in mug and add boiling water, stirring until powder is dissolved. Stir in honey, using more if desired. Stir in coconut milk or use frother to create coconut foam on top. Sprinkle with cinnamon.

The addition of the raw honey helps to deliver the chaga to hard to reach places within the body, enhancing body system functions.

I like that Anthony includes an Emotional Support section for each food in the book. He writes that chaga is invaluable for those who feel like they’re missing out on something, or who feel trapped in their life’s direction, emotionally stagnant and numb. Add chaga to your diet when help is needed envisioning the future.

What a powerful food. I cupped my mug of hot chaga tea and closed my eyes for a moment, feeling gratitude for all this wild food brings into my life. Then the first sip.

How does a fungus made into a tea taste? Wonderful! There isn’t a musky or moldy smell or taste AT ALL. Chaga tastes like tea…with honey, cinnamon and a splash of coconut milk added.

I’m excited to include this hot drink in my daily health routine. Chaga tea will serve as an afternoon pick me up and the turmeric milk will remain as my night time drink. Both will flood my body with powerful anti inflammatory nutrients. And that means increased health, wellness and vitality for me.

Sweet Potatoes with Braised Cabbage

This time of year, with its cooler, shorter days, I appreciate food that comforts and nurtures, without compromising my health. This colorful and nutritious meal is so satisfying, and it is not only full of flavor but full of health benefits as well.

This recipe comes from Life-Changing Foods, by Anthony William. In his second book, Anthony writes about 50 of the best foods to eat to heal and maintain health and wellness. Each chapter lists the benefits of the food and what conditions and symptoms it eases, and there are even sections on how that particular food provides emotional and spiritual support. For every food listed, there is a wonderful recipe to try. This book has been invaluable to me.

Sweet potatoes promote productive bacteria in the stomach, small intestine and colon, while starving out unproductive bacteria and fungi. These more colorful cousins of regular potatoes enhance the body’s production of vitamin B12. They are also packed with carotenoids, which are extremely powerful and protect against a host of cancers.

Sweet potatoes also rid the body of unusable, cancer causing estrogen that interferes with hormone function. And if insomnia is an issue, this potato will aid in a sound night’s sleep.

I’ve always enjoyed sweet potatoes, which made me an oddity as a child! As an adult I quit adding additional sweetness, in the form of brown sugar or marshmallows, nor do I douse my orange spuds in butter. I most often eat a baked sweet potato plain, with sprinkles of sea salt and coarsely ground black pepper. However, this easy to prepare recipe is a wonderful way to dress up my sweet potato in a healthy way.

These are so delicious. I love the tangy sauce that tops the stuffed sweet potato. Anthony writes that if you need some coddling, there is nothing more comforting than a baked sweet potato. I agree!

And this comfort food will not have an adverse effect on my body. What I have known in my life as comfort food rarely provided anything more a sugar rush or an excuse to overeat and twinges of guilt. Not so with the humble and benefit packed sweet potato.

This recipe will be prepared frequently this fall and winter.

Thumbprint Cookies

I know fall has arrived, no matter what the temps are outside, when I wake up full of energy, and with a strong desire to cook! A trip to the market today yielded bags of veggies, fruit, gluten free brown rice pasta, and staples to make a variety of healthy, plant based meals this weekend.

And, I picked up the ingredients to try a new recipe from Anthony William…Thumbprint Cookies.

Among the many things that I appreciate about Anthony is that he continually offers health information and new ways to prepare foods in healthy ways. These cookies are grain…and gluten…free, dairy free, and don’t contain refined sugar or high fructose corn syrup. The ingredient list is wholesome and the cookies are easy to prepare.

Thumbprint Cookies by Anthony William

 

Ingredients:

• 1 cup plus 2 tablespoons almond flour

• 1/2 teaspoon baking soda

• 1/2 teaspoon sea salt

• 1/2 cup tahini

• 1/2 cup coconut sugar or maple sugar

• 1/2 teaspoon alcohol free vanilla

• 1/2 cup white sesame seeds

• 1/2 cup raspberry sugar free jam (or other flavor) or make your own sugar free fruit jam

Preheat oven to 350 degrees. Line a cookie sheet with parchment paper. In a small bowl, combine almond flour, baking soda, and sea salt. Whisk together and set aside. Combine tahini, coconut sugar and vanilla in a food processor and process. Add flour mixture to processor and combine until smooth and mixture sticks together. If mixture is crumbly, add a small amount of water slowly until dough sticks together. Form dough into balls and roll in sesame seeds. Place 2 inches apart on cookie sheet and make an indentation in the center of each cookie with thumb. Bake 8-10 minutes. Cool. Add a small dollop of jam to each cookie. Makes about a dozen cookies.

The cookies only took a few minutes to prepare and pop into the oven. I purchase tahini, which is a paste made from sesame seeds, from a local health food store. I also use it making homemade hummus and dressings. I bought coconut sugar for the first time today, finding it at my usual food market. It resembles brown sugar and has a rich, not-too-sweet flavor.

I could not find the white sesame seeds, so I did not roll my cookie balls in it. I will check the health food store for this item and include the sesame seeds next time. And instead of raspberry sugar free jam, I used apricot “Just Fruit” jam, which doesn’t contain sugar or corn syrup.

These wonderful treats are good for me. The tahini, and sesame seeds when included, strengthen the nervous system and improve thyroid function. Raspberries are a powerful antioxidant that removes toxic impurities from the body. Apricots are an antioxidant as well, and rich in vitamin A. They strengthen the heart, blood and bones.

The thumbprint cookies were wonderful! Not too sweet, with a taste that reminds me of molasses cookies, these treats were so rich and satisfying. The apricot jam added a nice hint of tartness. I intend to make these treats often, and try different jam fillings.

I savored several cookies tonight, with a cup of hot Scottish thistle tea with a splash of almond coconut milk. Ahhhhh…what incredible bliss on an autumn evening.

Warm Bedtime Drink

I enjoy a warm drink in the evening, year around. During the summer, my drink of choice is a cup of hot herbal tea, brewed from herbs freshly picked from my garden. As the days become shorter and cooler temperatures mark the true arrival of fall, I look for additional nighttime drinks to sip on. It is essential to me that these bedtime drinks be warming and soothing and also full of health boosting benefits.

I was excited to try this turmeric milk. I found the recipe on Facebook, in a group I am part of called Avocado. This delicious and easy to prepare recipe comes from Anna Davis.

Warm Turmeric Milk

Ingredients

• 1 teaspoon dried turmeric

• 1 tablespoon raw organic honey

• Dash of coarsely ground black pepper

• Dash of cinnamon

• 1 cup of unsweetened dairy free plant based milk such as almond or coconut

In a small bowl mix together honey, turmeric, black pepper and cinnamon, making a paste. Warm plant based milk. Add small amount to turmeric mixture, stirring until smooth and thinned out. Add turmeric mixture to remainder of milk. Sprinkle with additional cinnamon and enjoy.

I used unsweetened almond coconut dairy free milk. The coconut adds a subtle flavor that I like. Plain almond milk can be used as well. As the milk heated, I whisked the honey, turmeric, black pepper and cinnamon together.

The spicy aroma was wonderfully tantalizing as I added a small amount of warm milk to the honey mixture. After it was thinned out, I poured the mixture into the cup of milk.

A sprinkle of cinnamon on top and my bedtime turmeric milk was ready to savor. And savor it I did. This drink was so good that I had to pace myself. The taste is flavorful but mild.

Turmeric is considered one of the most effective medicinal herbs with powerful benefits for the body. Curcumin, the active ingredient in turmeric, is anti-inflammatory and antioxidant. The body absorbs curcumin much better when black pepper is ingested at the same time.

Curcumin is linked to improved brain function and a lessening of brain diseases, less risk of heart disease, cancer prevention, depression prevention, inhibition of Alzheimer’s, improvement of arthritis through lessening of inflammation and anti-aging properties.

That’s a lot of health benefits packed into a tasty nighttime drink. In addition, turmeric soothes the digestive tract, which contributes to a better night’s sleep.

Raw organic honey, locally produced, is a good source of antioxidants. Health benefits of honey include soothes the digestive tract, eases seasonal allergies and sore throats, protects the body from cell damage, and it is antibacterial and anti-fungal.

Best of all, this drink centers me as it warms me, preparing me for a time of deep rest. I drank the turmeric milk last night, and fell asleep easily and quickly.

Writing about the drink and its many health benefits makes me crave another cup of turmeric milk tonight. This could become my favorite bedtime drink!

Mom’s Big Year

I haven’t shared many birthday posts this year. Last year I did celebratory posts for every member of my family, both immediate and extended, on their actual birthdays. I’ve given the tradition a bit of a rest this year.

Today is my mom’s birthday. And rather than sharing what her name means or how she has influenced my life, as I have done in the past, I want to express how proud I am of my mom, for making some big changes in her life.

Mom has had some health challenges the last few years. Nothing was life threatening, however a host of ailments has greatly affected how she felt and necessitated several surgeries. Some might simply accept that as we get older, our health naturally declines. While this can appear to be true, my mom decided to shift that belief and take responsibility for her health.

Exactly a year ago, I accompanied my mom on all of her doctors’ appointments. I had recently switched to a plant based diet, taking charge of my own health and desiring to heal from chronic pain. Seeing my improvements, Mom was interested in embracing a plant based lifestyle as well. During that week of doctor visits, I got their hearty approvals for her to eliminate meat, eggs, dairy and gluten from her diet and consume instead fruits, vegetables, brown rice, gluten free oats, nuts and legumes.

Because here was the incentive…we were planning a trip. In twelve months my sisters, niece, mom and I intended to visit Ireland, Scotland and England. Mom and I both wanted to enjoy that trip in good health.

Six months later, when she returned for check ups, Mom was excited to learn that her health was indeed shifting. Inflammation was greatly reduced. Other health conditions had improved. Her doctors were impressed and encouraged her to continue with a plant based lifestyle. Even though she ended up having to have a knee replacement at that time, due to breaking a bone in that joint, she recovered remarkably well.

Her surgeon approved travel…and our dream trip became a reality.

I am so incredibly proud of my mom. We spent 12 days traveling. During that time we walked, a lot. We climbed stairs, toured landmarks and castles, and spent hours in planes, trains, automobiles and buses. We hopped on and off the London Tube. Did we slow our pace a bit? Yes. But only because she had knee surgery, just six months ago. Did we ever leave her behind at a hotel? Not once.

Mom and I are continuing in our plant based lifestyle. It is too important to my health, and to hers, to ever go back to the way we used to eat. I am thrilled. Mom inspires me every day, and now she is showing me how to live life to the fullest, as a “senior”.

During our recent trip, I often thought how precious it was to see Ireland, Scotland and England with my family, and especially with my mom. Travel has been an important part of her life, and her desire to explore the world has been passed on to me.

I also thought that this trip might be Mom’s last overseas adventure. And if it is, we have absolutely no regrets. However, my sisters and I are already talking about taking another girls’ trip together in 2019. And guess who wants to go with us?

Happy birthday Mom. I love you. I am so grateful for you and your desire to be the best version of yourself, at every age. Long may you have new adventures. And yes, you are always welcome to travel with us!

Heavy Metals Detox Smoothie

I woke up this morning, craving this nutrient rich detox smoothie. After a year of following a plant based lifestyle, one of the many benefits is that I am very aware of my body’s needs. When I crave something, it is because my body needs it. When I am repulsed by something or I feel “off” about a food or drink, it is because my body doesn’t want it or need it.

I follow the Medical Medium health protocols, established by Anthony William. So I am well educated on the problems caused by heavy metals in the body. Most of us, if not all of us, have too many metals in our bodies, and we experience poor health as a result.

Anthony shares that toxic heavy metals…aluminum, mercury, lead, nickel, cadmium and copper…accumulate in our bodies and settle deep into our organs and tissues. We are exposed to these metals by daily contact with aluminum cans and foil, batteries, metal cooking pans, old paint and the food we eat. Herbicides and pesticides used on fruits and vegetables are a common source of heavy metals. As a result, we carry these toxic substances throughout our lives, and they build up.

It’s the metals we’ve had in our bodies the longest that pose the greatest health risk. Over time, the metals oxidize, damaging surrounding tissue and causing inflammation. Every system and organ in the body can be affected, including the brain and nervous system, the digestive system, and the immune system.

A unique characteristic of the heavy metals is that they form a neurotoxin. This poison is disruptive to the brain and nervous system, causing brain fog, memory loss, fatigue and depression. In the digestive tract, heavy metals create inflammation and serve as a food source for viruses, bacteria, parasites and pathogens, often resulting in a condition called Small Intestine Bacterial Overload, or SIBO. SIBO is characterized by bloating, abdominal pain, diarrhea and/or constipation and nutrient deficiencies.

When viruses such as shingles and Epstein Barr feed off of the metals, this can produce symptoms such as tingling, numbness, fatigue, anxiety, ringing in the ears, heart palpitations and dizziness, as well as knee pain, nerve pain, neck pain, foot pain and headaches in the back of the head.

I have dealt with many of these symptoms. I was tested for heavy metals years ago, and told that I did have them, but I was never told how to clear them from my body. Thankfully, it is relatively easy to pull the metals out of the tissues and organs with this simple to make detox smoothie.

Hawaiian spirulina draws heavy metals out of the brain and nervous system. Atlantic dulse binds to all of the metals deep in the intestines and doesn’t release them, removing them from the body. Cilantro is great for removing old metals that have been in the body for years. Wild blueberries draw metals from the brain, healing and repairing any damage caused by oxidation. Barley grass juice powder soaks up mercury drawn from the spleen, intestinal tract, pancreas, thyroid and reproductive system.

These products are available at your local health food store, or through Amazon. (Links below). Wild blueberries are in the frozen food section at the grocery store. Make sure the package says Wild Blueberries, as they are more powerful.

The recipe makes 32 ounces of health boosting goodness. I enjoy the taste. If you don’t care for cilantro, it will take getting used to, although the taste of this pungent herb is not overwhelming, combined with everything else. I have felt a huge difference this past year, since adding the foods listed above to my diet. Aches and pains have disappeared. My digestive system has healed.

However, for me to wake up craving this detox smoothie meant my body needed to get rid of more heavy metals.

On the recent long plane flights to and from Italy, I experienced mild restless legs. I used to suffer greatly from this irritating disorder. Restless legs syndrome can be caused by several things, including heavy metals in the body. I have not had problems with it for months, until the long flights.

With another overseas trip coming up in a month, perhaps my body is getting ready by alerting me to what it needs to do well. I am grateful for my built in guidance system and very grateful for Anthony and a way to continue detoxing my body.

For the next 30 days, I’ll be drinking a heavy metals detox smoothie daily. I intend to feel my very best as I head off to explore Ireland, Scotland and England. I owe it to myself to pay attention and practice such diligent self care.

National Strawberry Sundae Day? No Problem!

I doubt that I would have remembered this holiday, had a Facebook memory not popped up. Today is National Strawberry Sundae Day. In the past, if I was aware of this day at all, I drove through Andy’s Frozen Custard and picked up a strawberry sundae to celebrate. That’s what my Facebook memory was about. I wrote up a blog post about that sweet treat. 

I haven’t been to Andy’s in a year. Although I thought I would miss frozen custard, after switching to a plant based lifestyle, I have not. I used to routinely reward myself with this sugar laden treat, which was more an indicator of my unhealthy relationship with food than a desire for joyful celebration. 

National Strawberry Sundae Day? No Problem!
Being reminded that this was one of those quirky holidays prompted me to think about how much healthier I am this year, in my body and in my relationship with food. Having frozen bananas on hand, I felt inspired to make an easy, healthy version of a strawberry sundae. I felt I truly do have something to celebrate, and this wholesome treat provided a great contrast to the kinds of foods I used to consume. 

The recipe couldn’t be more simple. Slice up very ripe bananas, and freeze in a single layer in the freezer. Store there in gallon sized bags until ready to use. 

I have made banana “ice dream” using a blender and a food processor. The process is much easier and the nice dream much smoother, using the food processor. Add frozen banana slices, from 2-4 bananas, to the processor, and blend on high. Stop as necessary to stir, pushing unprocessed banana slices away from the sides. 

The change happens suddenly. Those frozen chunks of banana become a smooth, creamy mixture with a texture similar to soft serve frozen custard. You can add 1/2 a teaspoon of vanilla extract, if desired. No sweetener is necessary. Mixture can be stored in the freezer for an hour, for a firmer texture or eaten immediately.

In honor of the national holiday, I added fresh sliced strawberries, with nothing else added. This treat is simple, tasty, creamy, healthy and guilt free. This banana nice dream is the basic recipe. Other frozen fruit can be blended with the bananas to create an endless variety of cold, frosty treats perfect for warm summer evenings. Top with fresh fruit, nuts, organic coconut or blend together dates with a little water for a delicious sauce. 

I savored my strawberry sundae this evening, after a veggie and rice dinner. Such a treat allows me to remain focused on celebration, rather than falling prey to the feelings of regret that I used to experience after eating something that I knew was detrimental to my health. 

And what did I celebrate? Banana nice dream and strawberries, healthy choices, and feelings of joy accompanied by deep gratitude for this journey that is never dull or mundane or bland. Happy Strawberry Sundae Day. Happy Day.
