National Strawberry Sundae Day? No Problem!

I doubt that I would have remembered this holiday, had a Facebook memory not popped up. Today is National Strawberry Sundae Day. In the past, if I was aware of this day at all, I drove through Andy’s Frozen Custard and picked up a strawberry sundae to celebrate. That’s what my Facebook memory was about. I wrote up a blog post about that sweet treat. 

I haven’t been to Andy’s in a year. Although I thought I would miss frozen custard, after switching to a plant based lifestyle, I have not. I used to routinely reward myself with this sugar laden treat, which was more an indicator of my unhealthy relationship with food than a desire for joyful celebration.

Being reminded that this was one of those quirky holidays prompted me to think about how much healthier I am this year, in my body and in my relationship with food. Having frozen bananas on hand, I felt inspired to make an easy, healthy version of a strawberry sundae. I felt I truly do have something to celebrate, and this wholesome treat provided a great contrast to the kinds of foods I used to consume. 

The recipe couldn’t be more simple. Slice up very ripe bananas, and freeze in a single layer in the freezer. Store there in gallon sized bags until ready to use. 

I have made banana “ice dream” using a blender and a food processor. The process is much easier and the nice dream much smoother, using the food processor. Add frozen banana slices, from 2-4 bananas, to the processor, and blend on high. Stop as necessary to stir, pushing unprocessed banana slices away from the sides. 

The change happens suddenly. Those frozen chunks of banana become a smooth, creamy mixture with a texture similar to soft serve frozen custard. You can add 1/2 a teaspoon of vanilla extract, if desired. No sweetener is necessary. Mixture can be stored in the freezer for an hour, for a firmer texture or eaten immediately.

In honor of the national holiday, I added fresh sliced strawberries, with nothing else added. This treat is simple, tasty, creamy, healthy and guilt free. This banana nice dream is the basic recipe. Other frozen fruit can be blended with the bananas to create an endless variety of cold, frosty treats perfect for warm summer evenings. Top with fresh fruit, nuts, organic coconut or blend together dates with a little water for a delicious sauce. 

I savored my strawberry sundae this evening, after a veggie and rice dinner. Such a treat allows me to remain focused on celebration, rather than falling prey to the feelings of regret that I used to experience after eating something that I knew was detrimental to my health. 

And what did I celebrate? Banana nice dream and strawberries, healthy choices, and feelings of joy accompanied by deep gratitude for this journey that is never dull or mundane or bland. Happy Strawberry Sundae Day. Happy Day.

Today, July 4, is our nation’s birthday. For those intending to celebrate outside with cookouts, pool parties, and fireworks, the weather has been an issue. We’ve had thunderstorms and a steady rain for most of the day, casting a quieting effect over the day. 

I don’t mind the rain. It has been ideal for relaxing at home with a stack of books and perfect for catching up on a webinar I missed yesterday. Instead of barbecue and homemade ice cream, I’ve enjoyed simple plant based meals at home. When the downpour slowed to a light rain, Greg suggested a walk at Mercy Park, to appreciate the day, just as it was.

Normally the city’s parks would be full of people on July 4. But the rain kept people home or drove them to shelters. Only one other walker was braving Mercy park when we arrived, and she carried an umbrella. I opted for a light weight hoodie over a long sleeved shirt and black leggings…definitely not a typical summer outfit but perfect for a brisk walk on this cool day. 

As we circled the small lake at the heart of the park, I thought about the freedoms that I am so grateful for.

I love my country. Everyone, from the highest elected government official to the kids using technology to create their own You Tube channels, has the freedom to share their thoughts, views and perspectives. I am mindful on this day that celebrates independence that our freedom has been hard won and it is precious. 

I love my community as well. Walking in this  space where St John’s Hospital once stood reminds me that after the 2011 tornado, people were free to leave Joplin…or stay and rebuild. I am so grateful for those who chose to roll up their sleeves and stay, and for those who recognized the spirit of this city and came to help or chose to become one of us.

As I walked I felt deep appreciation and gratitude for my health. Freedom of movement is not something I take for granted. Freedom from pain, and freedom from illness and dis-ease are important freedoms to me as well today. My heart goes out to those who are suffering, as a result of accidents, injuries or illness. My desire is to walk alongside others and offer fresh hope for increased health and wellbeing. 

I appreciated the freedom to not only walk physically, but also the freedom to walk as my genuine authentic self. While I hesitate to take the comparison too far, my freedom has been hard won as well. It has taken years of increasing awareness and deep inner work to live in the freedom, peace and joy that I currently do. I am thankful for all who have walked beside me, offering into my life with love, or with their criticisms, mirroring to me aspects of myself that I needed to explore.

As we completed our walk, we paused near the butterfly mural at the eastern edge of the park. The butterfly reminds me that freedom often requires great change. Transformation isn’t easy. And yet I am grateful for every challenge and time of rest that occured, resulting in the strength to face my fears and come out the other side, free to fully be myself, free to embrace my whole heart. 

And freed as well was my creative nature. The little painted rock that we found at the base of the mural is symbolic of the new freedom I have to create and write and explore the areas of art that interest me. Painted rocks are a nationwide activity right now. Joplin has a club. People paint rocks  and hide them in public places. This is the first painted rock I have found! I hid it in another location at Mercy Park. 

As we drove away from the park, the rain began again in earnest. The timing of our “freedom” walk was perfect. 

Franklin D Roosevelt said, “In the truest sense freedom cannot be bestowed; it must be achieved.”

I get that, on all levels. Freedom is achieved, through our thoughts and ideas, our actions and our unity, and through our willingness to learn and grow. 

I am grateful for all of my freedoms.

Joey’s Birthday Lunch

My grandson Joey turned 11 years old Thursday. I have the tradition of taking each of my grandchildren out for a birthday lunch or dinner and shopping, just the two of us. More correctly, I give each child an allotted amount of money that he or she can spend, or save. It is always their choice. 

Today I had the joy of taking Joey to lunch and out shopping. He chose Lambert’s Cafe, near Springfield, MO, for his celebratory meal. I picked him up mid morning and off we went on an adventure.

I was as excited as Joey about going to Lambert’s. I have heard about this restaurant, famous for their tradition of throwing rolls to diners, since I moved to Joplin in the early 1980s. And yet, I have never visited it before. 

I looked up the history of this fun cafe. It was launched in 1942, in Sikeston, MO, when Earl and Agnes Lambert borrowed $1500 to open their own cafe. The original building was small, seating only 41 diners, but the couple immediately established the custom of serving wholesome meals consisting of vegetables, meats and desserts.

Their son, Norman, inadvertently began what is now a tradition. Passing out freshly made rolls in the cafe, he couldn’t get to a customer tucked into a corner. “Just throw the #%@$ thing!” the diner called out. They are still tossing out rolls at Lambert’s, these many years later. 

The cafe near Springfield is the company’s second location. It opened in 1994. Lambert’s is still owned and operated by the family.

Joey expressed a concern as we drove to Springfield. Lambert’s is so popular that there is always a wait time. What if we had a two hour wait? Joey had plans with his family later in the evening. We had a limited amount of time. This thoughtful boy googled to find other dining options, if we needed to go to Plan B.  

I silently put our desire to eat at Lambert’s out there as a request of the Divine. I asked for a short wait time so Joey could eat at his first choice for his special lunch. As we arrived at 11:30, I wondered though. The parking lots, all three of them, were full. A crowd of people milled about about outside. We decided to park in good faith, in the lot down the hill from the restaurant, and inquire about the wait time. 

I’m so glad we did. In spite of the crowds, we only had a 30 minute wait time for a booth for two.

What a bustling restaurant we walked into with a party like atmosphere! There are three dining areas, that combined, hold a surprisingly large number of people. Just before we were seated, a party of 35 strolled by us. The interior of the cafe is warm and homey, with lots of wood. Colorful flags hang from the ceilings and metal signs and car license plates adorn the walls. 

We ordered our lunches, chicken tenders for Joey, a vegetable plate for me, and enjoyed people watching and chatting as we waited for our food. My water and Joey’s Dr Pepper arrived in huge containers. That was foreshadowing. Everything is done in a big way at Lambert’s.

Not only are the meal portions very generous, the servers also bring around additional sides called “pass arounds”. Offered in an all you can eat manner, the extras consist of black eyed peas, fried potatoes and onions, fried okra, macaroni and tomatoes, and those famous rolls. It is a lot of food! It is good we were hungry. 

At last a server came into our dining room with a large basket full of hot rolls, fresh from the oven. You raise your hand if you want a roll, and prepare to catch it as the bread is thrown. This was great fun to watch, and difficult to capture well in a photo. Watch a brief video of roll throwing HERE.

We had a great lunch. I love that after sitting across from me initially, Joey asked if he could sit by me. He’s growing up, but he doesn’t mind being close. We talked about so many topics today. Joey is a great conversationalist. He’s polite, kind and thoughtful. I see him beginning to govern himself, monitoring his own speech and behavior, as he takes responsibility for his words and actions. Those are definite signs that this young man is leaving childhood behind. The teen years are rapidly approaching. 

Joey is artistic, creative and loves music, video games and technology. Later in the car he showed me birthday presents he received, demonstrating how his new gadgets for his iphone worked. Driving home, we listened to Ed Sheeran through a new mini speaker he got. 

Joey boxed up his leftovers and we left Lambert’s, extremely happy with our lunch. Our waiter even secured a birthday discount for us, in honor of Joey’s special day. I look forward to a return visit. 

And I look forward to many more such outings with Joey. We stopped by Toys R Us and the Battlefield Mall on our way out of town, so Joey could spend his birthday money. He scored with sale items today, making his money go even further. 

I am so proud of this gracious young man. He expressed gratitude for the lunch and the shopping trip and the time spent together. I felt gratitude too. I am grateful for him and for the incredible joy he brings. Happy birthday, Joey! Thank you for picking out such a fun place to eat. And thank you for being you, so delightfully. I love you!

Fresh Veggies Day

Three things converged to inspire tonight’s creative endeavor: it was hot today, with a heat index this afternoon of 105 degrees, making cooking undesirable; today is Fresh Veggies Day, which is the perfect holiday for one living a plant based lifestyle; and I wanted to try a new healthy honey mustard dressing recipe I found. It was the perfect evening for a fresh, chopped veggie salad for dinner!

I loved discovering that this was Fresh Veggies Day. My research didn’t turn up any info about this celebration, other than it is always recognized on June 16. However, it was easy enough to figure out how to celebrate…eat fresh veggies! 

I had already planned on a large chopped salad tonight , due to the warm temps, so what a happy occurrence. For me, the more veggies thrown into the mix, the better. I gathered the vegetables, and the ingredients for a simple, healthy version of Honey Mustard Dressing, from The Bewitchin’ Kitchen on Pinterest.

The dressing was a cinch to mix up, requiring only four ingredients. I popped the mason jar into the fridge while I chopped veggies for the salad.

The beauty of creating a chopped veggie salad is that any vegetable can be included. I used an assortment of fresh veggies, including celery, kale and spinach (from my garden), red onion, green, red and yellow peppers, banana peppers, carrots, tomatoes, zucchini and cucumber. For protein, I included two cups each of black beans and garbanzo beans. I added coarsely ground sea salt and black pepper, and topped the whole thing with a diced avocado.

This was one delicious meal! And during the summer months, this is my favorite kind of dinner. No cooking (I used canned organic beans), no fuss, very little clean up. I also got to use a vintage cut glass cruet, that once belonged to my Aunt Annie, to hold my chilled Honey Mustard Dressing. 

Both the salad and the dressing were wonderful! The honey mustard dressing was tangy and light and paired perfectly with the colorful chopped veggies. I’ll be making it often. I celebrated Fresh Veggies Day in the best possible way, with a healthy meal full of flavor. 

And I have leftovers! I get to enjoy a chopped veggie salad with honey mustard dressing again tomorrow. 

Dayan’s Graduation Party

It has been a beautiful weekend, spent with family. The focus of our time has been celebrating my grandson Dayan as he graduated from Carl Junction High School Friday night, turned 18 years old on that same day, and was the guest of honor at a party this afternoon.

After the party, as we were cleaning up and loading the cars, Dayan had the wonderful idea of releasing the two red and black Carl Junction Bulldogs balloons. With Aubrey as his helper, he carried the helium filled balloons to the parking lot. Those who remained after the party gathered to watch. It felt like an important moment.

I love that series of photos. I appreciate that anytime Dayan interacts with a child, he kneels down so he’s on the same level. And I find so much meaning in the middle photo. Dayan has just released the ballons, symbolizing letting go of his time in Carl Junction schools.

It is not a forgetting of those years. He is just not holding on to them. Look at his open hand as the balloons fly away. Releasing balloons has become a way of honoring someone or something…and a way of saying goodbye. Dayan is open to receive what will come next, enjoying these moments, looking upward and onward to a bright future.

And little Aubrey standing beside him represents all of us who are walking alongside Dayan as he journeys…family and friends, colleagues and teachers. We all stood and watched the balloons soar higher and higher, until they disappeared.

Dayan’s Milestone Day

A year ago, when my daughter Elissa found out Dayan’s graduation day would be on May 19, which is his birthday, I had two thoughts: That will be an easy date to remember. And the next year will go by so fast. I was correct on both counts. I never once wondered what day graduation would be. And the year flew by.

My grandson, my oldest grandchild, the boy who made me a grandmother and christened me with the name Yaya, reached this momentous day exactly on time actually. To his family, and especially his mother, it marked the completion of a year that was full of “lasts”. The last marching band performance, the last parade, the last competition and ceremony and award, the last time to walk to school, the last time to walk out of the Carl Junction High School, the last time to play the tuba that he has played for years.

I thought about Dayan throughout this day, as he celebrated a birthday and prepared to graduate tonight, and the word “milestones” came to mind. A milestone is an event or action marking a significant change or stage in development. Dayan has had many of those mile markers in the last 18 years, signifiers of growth, times of deeper awareness, ahas that profoundly shaped his future. 

It has been my pleasure to walk alongside him as he has journeyed, and witness those times when a “stone” was placed at a significant juncture. I’ve watched him as an intelligent, kind, compassionate boy who always knew the right encouraging words to share with people. I saw him as a young teenager stepping up to fully occupy his unique Dayan shaped space, gaining confidence in who he was and what his gifts and abilities were.

These past two years, the milestones became defining ones as Dayan could say “This is me…this is not me. This is what I want to do…this is what I don’t want to do. This is the path I am choosing for my life…this is not the path for me…” with a surety that so inspired me. Along with common milestones like getting his driver’s license and a job, he had major shifts as he decided on a future career in politics and selected University of Missouri as the college he would attend this fall. 

It is not a coincidence that Dayan experienced two momentous milestones on the same day. He turned 18 years old today and graduated from high school. Both signify leaving childhood behind and entering adulthood, dual doors closing and opening at the same time as a new adventure beckons.

This evening it was with great joy, and a host of other emotions, that I watched my grandson walk across the stage to receive his diploma. Family members surrounded me. We beamed and cheered and perhaps shed a few tears that this milestone had been reached. This boy has become a man. This child has reached the point of spreading his wings to see just how high and how far he can fly. 

I am proud of this incredible young man. I am proud of my daughter, who has been an extraordinary momma to her son, fierce in her love and devotion to him, never failing to seek the best for her child and encouraging him to be all that he could be. And I am proud of my son-in-law, who came into Dayan’s life as a stepdad, but who has parented him with an open and generous heart.

When he was a toddler, Dayan and I began an ongoing series of stories that we affectionately called “The Continuing Adventures of Dayan and Yaya”. Those were fun and imaginative stories that we created. However, we have had many, many real life adventures, this boy and I. Spending time together, Dayan has helped me to see the world differently. He has helped me to see myself differently. He allows me to be fully myself. We laugh. We learn new things. We go places. 

We have a big adventure coming up, a trip to Italy that Elissa is joining us on. And then soon, Dayan will set off on adventures of his own, going places I will not go, seeing things I will not see. Milestones stretch behind us, a map of times we’ve celebrated and events we’ve shared. The road stretches onward, full of possibilities and opportunities. There are exciting times ahead for him that he will memorialize, saying “Here…this time, this place, is important in my life.” 

No matter where he is, no matter where I am…I’ll pause to celebrate those future achievements and milestones with him, whether in person or in my heart. 

Happy birthday Dayan. Happy graduation day. Happy first day of the rest of your amazing life. Go forth. Be you. Be Light in the world. I love you!

Family Celebrations

What a fun afternoon, as family members gathered in Oklahoma to celebrate two birthdays and an early Mother’s Day. Surprised today, was my brother Bryan, whose actual birthday is Tuesday. He was suspicious when he arrived at his mom’s house, and found too many cars parked around it. And genuinely surprised, I think, to find his sisters, sons, mother-in-law and other family waiting for him on the back patio. He arrived kind of quietly, so we almost muffed up the shout of “Happy birthday!”

Also surprised today was my sister Debbie, whose birthday is tomorrow. She thought she was attending a surprise party for our brother. My stepmom prepared birthday cakes for Bryan and Debbie and we all brought celebratory cards for both.

And, because tomorrow is also Mother’s Day, we honored my stepmom, Jerri. She received her own stack of cards and loving hugs.

It was an all out party. Steve grilled hamburgers and hotdogs and Jerri made her famous crockpot beans. Bryan’s wife Christel brought yummy hummus and I supplied organic non GMO tortilla chips and plant based dishes…potato and herb salad and colorful chopped salad. I passed on the burgers and hotdogs. And while everyone else enjoyed chocolate cake and ice cream, I had a delicious bowl of fresh chopped fruit.

I appreciated that Jerri gathered us all together. There was much laughter and an easy flow of conversation. The four younger kids present had a big yard to run and play in and the covered patio offered protection from the sun while allowing the breeze to cool us. 

We chatted about life and summer plans, sang happy birthday, told stories and loved on each other. My family does many things well, and near the top of the list is celebrating each other.

These are precious times, as we create joy filled memories. The hours spent together are made more poignant by the keenly felt absence of my father, who passed away seven years ago. I still hear the echo of his voice, and his infectious laughter, in this place, the house he shared with my stepmother. I know he was with us in Spirit this afternoon, celebrating Bryan and Debbie. And I know he must feel proud of his wife who walked so valiantly with him through his illness, and now lives life to the fullest, for both of them.

As so often happens, after a fun day of being with each other, we vowed to get together again soon…for another celebration, or just because. 

Happy birthday Bryan. I love you brother and I am proud of the amazing man you have become. I look forward to many more adventures together, including a shared trip to Scotland! Let’s plan that journey soon. 

Happy birthday Debbie. I love you sister and appreciate your creativity and your compassionate heart. We have shared many adventures, with more just on the horizon. Thank you for walking with me. 

Happy Mother’s Day Jerri. I love you, my second mom, and I am grateful to have you in my life. Thank you for your gracious hospitality today and for your courageous and generous heart.

Today is my son’s birthday. He and his family are off on an adventure, celebrating him with a fun weekend. I am celebrating Nate, my middle child, my son, with words and a full and grateful heart.

True words that describe Nate well! He does have a bright, inquisitive, imaginative mind. Since boyhood he has lived creatively, drawing, building, using raw materials such as cardboard, paint and a glue gun to create whatever his mind could visualize. The boy was gifted with the ability to birth ideas into reality. The man still enjoys that artistic challenge. 

Nate has known since the age of eight what he wanted to do as an adult, and why. He started down the path of law enforcement at that time and has never wavered from his plan. His desire to “serve and protect” not only applies to his family, it guides him in serving and protecting his community. 

I’ve ridden with my son in his police car as he patrols his city, full of pride for the way he does his job, respecting people, offering assistance, enforcing the law without breaking the spirit of the offender. And I have to admit to delight when my son instructed me, with a grin, to tighten my seatbelt and hold on securely as he flipped on lights and sirens and responded to an urgent call.

Nate is an exemplary and outstanding police officer, a sergeant with his department, always learning and growing and training and helping others. And yet where he shines is as a husband and dad, a brother and son. It makes my heart sing when I see this tall, handsome man laughing and playing with his kids or holding his lovely wife’s hand or teasing his sisters. 

He is present with his family, making the time to show up for the kids’ sporting events and awards. Nate knows that his time is the most important gift he can give to Joey, Oliver and Aubrey, and to Megan. They all play games together, take fun trips to Kansas City, Branson and Florida, create projects and go for walks. The time invested reaps smiles and laughter now…and boundless love, respect and appreciation for a lifetime.

Today is the birthday of my son-in-law Josh. Married to my older daughter, Elissa, Josh officially joined our family a couple of years ago, when these two first borns said I do during their November wedding. However, I’ve known Josh his entire life. I was thrilled by Elissa’s and Josh’s union, and also by the journey of the Adams and the Moores, beyond friendship to family.

Celebrating my son-in-law, I am happy for the opportunity to look up his name. I began this practice as part of the birthday blog posts last April, missing the family members born in January, February and March.

I recognize and appreciate these characteristics about Josh. He has an amazing heart, full of patience, kindness and love for others. He is a wonderful husband to Elissa, and a fun and attentive dad to Jonathan and Dayan. Family is important to him, and his quiet wisdom and strength are vital. 

In this past year, he has stepped into a leadership role, and an entrepreneurial one, starting his own pest control company. He is diligent, and methodical, about building his business and offering exceptional customer service.

Josh is most definitely a peacemaker. He listens. He offers sincere and heartfelt advice after considering options. I believe Josh does desire harmony with others and seeks benevolent ways to accomplish that in all of his relationships…with his wife and family, with friends, and with clients. Josh is the kind of person whose presence brings peace and the sense that all is well. 

His steady and consistent nature includes a delightful sense of humor. Josh knows how to have fun and laughs easily. I love watching my children and grandchildren interact. Josh is typically there in the midst of them, joking or striking a humorous pose.

Thank you, Josh, for all that you contribute to our family…for showing such love and devotion to Elissa, Jonathan and Dayan…for giving so selflessly from your heart. Thank you for joining in wholeheartedly at family gatherings and getting your license so you could officiate at Adriel and Nate’s wedding and being a peacemaker. Thank you for listening and sharing and going above and beyond in carrying out your responsibilities to your family. Thank you for making us laugh.

Surrender 65: Happy Birthday Linda

This year I surrendered to an idea to celebrate each member of my family, on the day of his or her birth. Whether there’s a party on the big day, or I see them another time, or I simply send a happy birthday text, I want to take the time to express my appreciation for who that person is. Today is my sister Linda’s birthday. 

 

I’ve known my sister since her birth, and oh, the stories I could tell! That is, perhaps, a post for another time. Instead, as I have with other family members, I’ll focus of the past year, since Linda’s last birthday. And what a fun year it’s been. 
 

  
Linda continues to accompany me on many of my adventures. And invites me on some of her own. In the past year we’ve enjoyed watching The Phantom of the Opera musical from front row seats, attended parties and a wedding, and said good bye to a cousin, an uncle and two aunts. She journeyed alongside me as Greg’s dad also stepped into eternity last summer, offering encouragement and quiet help. 
 

 
We enjoyed the annual Halloween party, hosted by our younger sister, niece and nephew. And got lost in our first corn maze with Mom and our granddaughters, Aubrey and London. We made new vision boards, while having deep discussions and impromptu sing alongs with Dayan and Mom. In fact, we gathered to have fun for any reason whatsoever. That’s one of Linda’s greatest gifts that she offers to others, the ability to have fun and make an ordinary event extraordinary. 

  

She continues be an advocate for animals, her heart tender toward those who are homeless, abused or neglected. And Linda’s heart is just as tender toward people, especially those who are overlooked, under appreciated or who have lost their way. She is a champion for the one who lacks confidence in himself and a cheerleader for the one who has a difficult time seeing her own value. It’s important for me to remember that sometimes Linda also appreciates being championed and cheered for as well. 

 

 
Linda’s greatest gift is how fiercely and deeply she cares for her family. She offers that love to all of us, parents, siblings, nieces, nephews and all the “grands” in the family. However, as Mom to her two sons and their brides, and Gigi to her four grandchildren, she shines. She is selfless in her devotion, dividing her time between her Tulsa clan and her Joplin clan. She is a witness to their lives, present for celebrations and achievements. London, Aralyn, Weston and Lola are too young yet to realize what an amazing grandmother they have. They just know she’s there for them and she’s fun and she loves them very much. 

 

May the next year bring continued joys and blessings to my sister Linda. May she know boundless grace, deep peace and experience an abundance of wealth, fun, health and vitality. I look forward to many more adventures together. Happy birthday, Linda. I love you!
